Till recently the Environment, and Saving the Planet have been the primary buzz words. Now the world-wide pandemic covid 19 has set many of us thinking about how to overcome this new demon. We will all have to change our lifestyles, slowly and surely. But what has to be done with immediate effect is to increase our immunity.
With restaurants and eateries shut there is little or no chance of eating out. But what is life without the pizzas, burgers and French fries and the ubiquitous Maggie!
Ok … so we shall compromise and sin once a week!
Join an online baking class or look up some recipes, or ask a friend, and prepare these at home. The end product may not be as yummy as the restaurants but we’ll be assured that we’re providing our families their much-loved snacks sans the additives!

The Wonder of Carrot Leaves
It was by accident that I came to know of this wonder herb! ” Eureka! ” thought I, ” how come I never thought about it?”
About two months ago, just before the nation-wide lockdown we’d bought a second hand refrigerator, a giant one with three freezer shelves. To avoid frequent shopping for veggies I would stock up our fridge, freezing mostly tomatoes and peas but nothing much else. I asked my friend from whom we had bought the fridge about using the freezer to the optimum when she mentioned stocking up on greens.
“But spinach is not in season,” said I, “and amaranth is not so palatable”.
“Keep carrot leaves, Aunty” she said.
“Carrot leaves? Who in the world has carrot leaves? That is rabbit food!”
My friend, who is from Rajasthan, said carrot leaves are commonly eaten in her home town. I had always cribbed about buying carrots with a whole lot of leaves adding to the weight, just to throw them in my compost bin.
And so, began my research.
Without wasting time, I prepared a carrot leaf juice made potent with the addition of fresh organic coriander, cucumber and raw mangoes.
The green juice thus prepared, is a chlorophyll packed detox juice, taking in all the powerful solar energy.
- Carrot leaves are excellent for tired eyes (all of us work on smart phones and computers).
- Coriander are a great antioxidant. They flush out the kidneys. A friend has revived both his kidneys just by munching a bunch of coriander leaves on a daily basis thus escaping dialysis and a transplant. He can now drink copious amounts of water!
- Cucumber, apart from making the juice palatable, makes the body alkaline. Remember, an acidic body lowers immunity and invites disease.
- Raw mangoes/ or a dash of lime juice contributes the much-required Vitamin C. The iron of the greens is best absorbed with the combination Vitamin C.
Make use of these potent carrot leaves while you get them.
PS: All green vegetables make a healthy meal but not the way we prepare them. The way we Indians prepare our vegetables is killing the nutrients. But old habits die last. We shall still prepare them the way our grandmother did! But remember we didn’t have chemical fertilisers and pesticides then. The materialistic world did not exist. Scientific inventions have proved to be detrimental in many a way.
PPS: The clock is gradually reversing, stone ground flour, water mills and our very own stone ground chutneys and pestos are much in favour.
